Cantina Giovannini

Nestled among the rolling hills of Narni, Cantina Giovannini embodies our family’s total dedication to the production of Ciliegiolo wine, a product that encapsulates the true essence of our territory, to which we are closely connected.
We are proud to be the only winery to offer such a rich and diverse range of wines from Ciliegiolo grapes, with four pure labels that express the essence of this prized grape variety. Our range is further enriched with a Ciliegiolo passito, a sweet and intensely aromatic wine, and a Ciliegiolo grappa, a distillate that captures the purest essence of the grape.

Our innovation has no boundaries: we pioneered the “Ciliegiolo 2.0” project, whose research was carried out in collaboration with the University of Tuscia. The project has allowed us to explore new frontiers in wine production, revolutionizing the concept of Ciliegiolo as a ready-to-drink wine and leading to the creation of the first long-lived Ciliegiolo, with extraordinary complexity and persistence.

Ciliegiolo

Ciliegiolo di Narni is Cantina Giovannini’s cru, cultivated and produced at 158 m above sea level on soft hillsides with 100 percent ciliegiolo grapes with spurred cordon training. The grapes are harvested the third week of September, after being hand-selected, and are then crushed and destemmed and sent to the steel tank in which they ferment at a controlled temperature for about two weeks. At the end of fermentation, a 72-hour maceration on the skins is carried out to implement the wine’s tannic endowment, which is then stored in steel tanks where it continues malolactic fermentation and ages on the fine lees for about 9 months. After bottling, the wine remains to rest in the cellar for 6 to 8 months.
The result of this process generates a fruity wine on the nose with notes of ripe cherries, black currants and field herbs. On the palate it is immediate in its pleasantness and juiciness of fruit, medium-bodied with intense but never intrusive tannins.
It goes well with charcuterie boards, first courses with meat sauces or roasted white meat main courses

Summa Rosato Narni

Summa Rosato Narni is a 100% Ciliegiolo rosé, its training system is spurred cordon and the harvest takes place in mid-September. For this wine, too, the grapes are selected and whole cluster pressed to maintain all the fragrance of the fruit and avoid excessive color extraction. The must undergoes cold static clarification, while the subsequent alcoholic fermentation takes place at a controlled temperature. Once fermentation is finished, the wine is racked to separate it from the coarse lees and aged on the fine lees for 8 months. It is finally bottled and allowed to rest in the cellar. The work done in the cellar makes the wine refined, notes of small red fruits on the nose, fresh and immediate in the mouth with a clear taste-olfactory correspondence in which the cherry is the main descriptor. Freshness and minerality give it a high persistence in the mouth. Ideal for aperitifs, appetizers, fish dishes, mildly intense white sauces and vegetables.

GRA' Rosé

GRA’ Rosè is an Italian method sparkling wine with 100% Ciliegiolo grapes. It is harvested in the second/third week of August, and after picking, the grapes are whole cluster pressed in order to extract very few polyphenolic substances from the skins: hence the very light pink color, called onion skin.
The clarified must is fermented at low temperatures to enhance the elegant, fruity and fresh notes.
Aromatic complexity is imparted by malolactic fermentation achieved through aging on lees. The second fermentation takes place in temperature-controlled autoclaves, followed by a second six-month aging period on the lees.
It pleasantly accompanies rich hors d’oeuvres, also excellent with first courses of red sauces and vegetables. It pairs nicely with truffle and fish dishes.

Passito di Ciliegiolo

A 100% Ciliegiolo Passito, it is harvested in the first ten days of September from a spurred cordon-trained vineyard and then dried in the fruttaio for three months. After this time has passed, the grapes are destemmed, crushed and put to ferment in steel with the skins until halfway through fermentation, then pressed and fermentation continues in steel until it stops naturally due to increasing alcohol concentration. Finally, the wine is put to age in oak barrels for 12 months. The pleasantness of cherries in spirit is the dominant fruit, accompanied by spicy notes and a subtle tannicity balanced by the very balanced residual sugar. It can be paired with aged cheeses, small pastries including almond cakes, tarts with red fruit jam, cocoa and chocolate desserts.

Grappa di Ciliegiolo

Grappa di Ciliegiolo is a distillate produced by the Giovannini winery, the processing of which begins immediately after the harvest with the cherry grape marc. After alcoholic fermentation in the cellar (with the must itself) it arrives at the distillery where, after racking and light pressing, it is passed immediately into the still. The distillation, totally in copper and stainless steel, allows all the aromas of the pomace of origin to be preserved. The grappa is produced at an alcohol content of about 42° and then left to rest for about 8 months.
Its transparent, crystal-clear appearance and soft, fragrant taste make this distillate an ideal after-meal drink.
